Pork Quiche - cooking recipe

1 packet pizza base mix
2 medium eggs
100 g sour cream
2 tbsp oil
350 g pork mince
175 g onions, chopped
1 bunch spring onions, finely sliced
400 g cherry tomatoes, halved
Preparation

In a large bowl, make the pizza dough as per packet instructions and set aside to proof for the appropriate time. In another bowl, mix the eggs and sour cream. Season with salt and pepper and set aside.
Preheat oven to 400\u00b0F. Heat oil in a pan and cook the meat for about 4 mins until browned. Add the onions and saute for another 3-4 mins then stir in the scallions and cherry tomatoes and simmer for 2-3 mins. Remove from heat, season with salt and pepper and set aside.
When the pizza dough is ready, roll out and transfer to a greased 9 inch quiche pan. Push the dough into the edges then fill with the tomato mixture. Top with the egg mixture and bake on the bottom rack. After about 10 mins, cover with foil to avoid burning. Cook for another 10-15 mins. Remove from the oven, allow to cool, cut and serve.
