San Choy Bow - cooking recipe

Ingredients
    1 tbsp peanut oil
    1 tsp ginger, finely chopped
    1 clove garlic, crushed
    1 lb ground pork
    6 None scallions, finely sliced, plus extra for garnish
    1.5 oz ham, chopped
    1.75 oz mushrooms, chopped
    1.75 oz bamboo shoots
    1 oz bean sprouts
    2 tbsp dry sherry
    1 tbsp soy sauce, plus extra to serve
    1 tbsp oyster sauce
    8 large leaves iceberg lettuce
    1 None red chili, sliced (optional)
Preparation
    Heat oil in a large frying pan on high. Saute ginger and garlic for 30 seconds, or until fragrant.
    Add pork and brown for 4-5 mins, breaking up the lumps with the back of a spoon as it cooks.
    Stir in scallions, ham, mushrooms, bamboo shoots and bean sprouts. Cook, stirring, for 3-4 mins.
    Stir in sherry and sauces. Spoon into lettuce leaves and sprinkled with extra scallion. Serve with extra soy sauce and sliced chili (if using).
