Sweet And Sour Pork Roast - cooking recipe

1 (5-6 lb) pork loin roast
1 tsp garlic powder
1 tsp onion powder
1/2 cup pineapple preserves
1/4 cup oyster sauce
3 tbsp rice vinegar
2 tbsp brown sugar
2 tsp minced garlic
1 1/2 cups broccoli florets
2 tbsp vegetable oil
3 None bell peppers, seeded and sliced into thin strips
1 None large red onion, sliced
1 cup fresh pineapple wedges
2 tbsp diced candied ginger
Preparation

Preheat oven to 450\u00b0F. Season and sprinkle pork roast with garlic powder and onion powder. Roast for 10 mins. Reduce heat to 325\u00b0F and roast for 1 hour.
Meanwhile, whisk together pineapple preserves, oyster sauce, rice vinegar, brown sugar and garlic. Brush 1/2 of the glaze over pork and roast until a thermometer inserted in the thickest part reads 145\u00b0F. Remove from oven and let rest for 20 mins.
Blanch broccoli in boiling salted water for 2 mins. Drain.
Heat oil in a large frying pan over medium heat. Add vegetables and stir-fry for 3 mins. Add remaining glaze and toss to coat. Serve with roast pork, garnished with pineapple wedges and candied ginger.
