Bacon, Lima Bean And Tomato Salad With Grilled Cheese - cooking recipe

Ingredients
    1 (13.5 oz) can lima beans, rinsed
    8.75 oz cherry tomatoes, halved
    4 slices bacon, chopped
    2 tsp vegetable or olive oil
    8 slices thick white bread
    4 slices Cheddar cheese
    3 tbsp fresh flat-leaf parsley leaves
Preparation
    Preheat oven to 475\u00b0F. Combine beans, tomatoes, bacon and oil in a roasting pan. Bake for 15-18 mins, or until bacon is crisp and tomatoes soften.
    Meanwhile, preheat a sandwich press. Using a 3 1/2 inch heart-shaped cookie cutter, cut 8 hearts from bread slices. Using a 3 inch heart-shaped cutter, cut 4 hearts from cheese. Sandwich each slice of cheese between 2 slices of bread. Lightly coat with oil then toast in sandwich press for 5 mins, or until golden.
    Remove bacon mixture from oven. Add parsley and toss to combine. Season. Serve bacon mixture with grilled cheese.
