5 tbsp salted butter
1 tsp honey
1/4 cup all-purpose flour
1 tsp baking powder
1.75 oz ground almonds
1 None lemon, zested
1/2 cup powdered sugar + extra for dusting
3 None medium egg whites
12 None raspberries
Preparation

Preheat oven to 350\u00b0F. Melt the butter, stir in the honey and allow to cool. In a separate bowl mix the flour, baking powder, almonds, lemon peel and powdered sugar.
Whisk the egg whites for about 3 minutes until creamy, then stir in the melted butter and honey. Fold in the flour mixture.
Grease 6 small cake pans (2 x 3 inches) or a dessert bar pan and pour in the dough. Top with 2 raspberries and bake for 7-10 minutes until golden brown. Remove from pans. Cool on a wire rack and dust with powdered sugar before serving.
