Marmalade Sponge Pudding - cooking recipe

Ingredients
    3 None eggs, separated
    3/4 cup granulated sugar
    5 tbsp butter, melted
    3/4 cup milk
    2 tsp grated lemon peel
    1/3 cup lemon juice
    1/4 cup lime marmalade
    1/3 cup self-rising flour
    None None Powdered sugar, to serve
Preparation
    Preheat the oven to 350\u00b0F. Grease a 1 1/2-quart baking dish.
    Beat the egg yolks and 1/2 cup of the sugar in a large bowl with an electric mixer until thick and creamy. Stir in the butter, milk, lemon peel and juice, marmalade and sifted flour.
    Beat egg whites in a clean medium bowl with an electric mixer until soft peaks form. Gradually add remaining 1/4 cup sugar; beat until dissolved between additions. Fold into lemon mixture in 2 batches. Pour into prepared dish.
    Place the dish into a large baking pan and pour in enough boiling water to come halfway up side of pan.
    Bake for about 50 mins, or until pudding is set. Dust with powdered sugar and serve.
