Cauliflower And Green Pea Curry - cooking recipe
Ingredients

2 tbsp clarified butter or oil
1/3 lb onion, finely chopped
2 cloves garlic, minced
2 tbsp fresh ginger, grated
1/3 cup hot curry paste
3/4 cup cream
1 1/4 lb cauliflower florets
1 lb tomatoes, coarsely chopped
1/4 lb frozen peas
1 1/4 cup yogurt
3 None hard-boiled eggs, sliced thinly
None None fresh cilantro, finely chopped, to garnish
Preparation

Heat clarified butter in a large saucepan and sweat onion, garlic and ginger, stirring, until onion is soft. Add curry paste and cook, stirring, until mixture is fragrant. Add cream and bring to a boil. Reduce heat, add cauliflower and tomatoes and simmer, uncovered, for 5 mins, stirring occasionally. Add peas and yogurt and cook over low heat for about 5 mins or until peas and cauliflower are just cooked. Serve with hard-boiled eggs and garnish with cilantro.
