Ingredients

5 oz Feta cheese, diced
5 oz soft dried figs, diced
1/3 cup walnuts, finely chopped
6 sprigs fresh thyme, roughly chopped
2 tbsp honey
4 oz phyllo dough sheets, rested at room temperature for 10 mins, then cut into 15 equal strips
3 tbsp butter, melted
Preparation

Preheat the oven to 400\u00b0F. Line a baking sheet with parchment paper. In a bowl, mix the Feta, figs, walnuts, thyme and honey. Brush the pastry with the butter.
Divide the cheese mixture equally between the phyllo strips, placing it at the top of each strip. Fold the phyllo over the cheese mixture, forming a triangle, and continue folding over until you have triangular parcels. Arrange on the baking sheet and bake for 12 mins, or until golden.
