Chicken Breast With Tomato Curry And Noodles - cooking recipe

Ingredients
    500 g chicken fillets
    2 tbsp sunflower oil
    400 g broad ribbon noodles
    1 None onion, finely chopped
    1 small banana, peeled and chopped
    1 tbsp plain flour
    1 tbsp curry powder
    1 tbsp tomato paste
    125 ml vegetable stock
    125 ml apple juice
    None None basil to garnish
Preparation
    Heat 1 tbsp oil in a pan and gently saute the chicken for about 10 mins, turning frequently. Meanwhile, cook the pasta in boiling salted water according to the package instructions.
    For the sauce, heat 1 tbsp oil and saute the onion and banana until the onion is translucent. Add the flour and curry powder and cook for 1 min. Add the tomato paste, stock and apple juice stirring. Bring to a boil then simmer for 5 mins, stirring occasionally. Season.
    Drain the noodles in a colander and add to the sauce. Cut the chicken into slices. Arrange the pasta and meat in a shallow bowl or plate and garnish with basil.
