Ingredients

1 cup sugar
8 None peaches, peeled, pitted and chopped
2 None limes, juiced
2 None egg whites
Preparation

Place 2 cups water and sugar in a medium saucepan on low heat. Stir until sugar has dissolved. Bring to a boil on high heat. Reduce heat to low and simmer, without stirring, for 10 mins. Remove from heat. Cool to room temperature.
Place peaches and syrup in a food processor or blender. Process until pureed. Stir in lime juice. Pour into a large bowl or cake pan.
Freeze for 3 hours, stirring occasionally with a fork. Spoon mixture into a food processor or blender. Add egg whites. Process until smooth. Return to pan and freeze until ready to serve. Serve in scoops.
