Chicken Chow Mein - cooking recipe

Ingredients
    1 lb chicken thighs, thinly sliced
    7 oz pork tenderloin, thinly sliced
    1 clove garlic, minced
    2 tbsp peanut oil
    2 tsp soy sauce
    1 tsp brandy
    1 None small carrot, peeled, sliced
    1 None medium red pepper, sliced
    4 None green onions, chopped
    2 stalks celery, trimmed, sliced
    7 oz raw shrimp, peeled, deveined, chopped
    1/2 None medium Chinese cabbage, shredded
    1 tsp cornstarch
    1/2 cup chicken stock
    1 tbsp oyster sauce
    3.5 oz fried noodles
Preparation
    In a medium bowl, combine chicken, pork, garlic, 1 tbsp peanut oil, soy sauce and brandy. Cover and chill for 3 hours, or overnight.
    Heat 1/2 tbsp peanut oil in a wok or large frying pan. Working in batches, stir-fry chicken and pork mixture until browned. Set aside. Add remaining oil to wok and stir-fry carrot, pepper, green onions and celery until carrot is just tender. Add shrimp and cabbage. Stir-fry until cabbage is almost wilted. Return chicken mixture to wok. Whisk together cornstarch and chicken stock then add to pan along with oyster sauce. Bring to a boil and cook until thickened slightly.
    Serve topped with fried noodles.
