Chocolate Cupcakes With Chocolate-Orange Frosting - cooking recipe

1/4 cup light buttery spread
1/3 cup packed brown sugar
1 tsp vanilla extract
2 None eggs, at room temperature
1/2 cup applesauce
1/3 cup plus 2 tbsp unsweetened cocoa powder
1/4 cup self-rising flour
1/2 tsp baking soda
1 cup buttermilk
1/3 cup powdered sugar
1/2 cup light spreadable cream cheese
1 tsp finely grated orange peel

Preheat the oven to 350\u00b0F. Line a 12-cup muffin pan with paper liners. Beat buttery spread, brown sugar and vanilla extract in a large bowl with an electric mixer on medium speed until just combined. Add eggs, 1 at a time, beating well after each addition. Stir in applesauce until combined.
Sift 1/3 cup cocoa powder, flour and baking soda over batter; stir until combined. Stir in buttermilk. Spoon into muffin cups.
Bake 12-15 mins or until a toothpick inserted into center comes out clean. Cool in pan for 5 mins. Remove from pan; cool completely on a wire rack.
For the frosting, sift 2 tbsp cocoa powder and powdered sugar into a bowl. Stir in cream cheese and orange peel until well blended. Frost cooled cupcakes.
