Caramelized Onion & Goat Cheese Quiches - cooking recipe

1 tbsp olive oil
1 tbsp butter
2 large onions, thinly sliced
1 tsp salt
1 tsp brown sugar
2 tsp lemon thyme leaves
2 None eggs
1 tbsp milk
2 oz goat cheese, crumbled
2 None refrigerated pie crusts

Preheat the oven to 350\u00b0F. Grease a 12-cup mini tart pan (capacity of each cup is 2 tbsp).
Heat olive oil and butter in a large skillet on medium-high heat. Cook onions with salt and brown sugar, stirring for 5 mins or until onion starts to soften. Reduce heat to medium; cook, covered, for a further 10 mins, stirring occasionally or until caramelized. Remove from heat; stir in lemon thyme leaves.
Whisk eggs with milk in a medium bowl; season.
Using a 3-inch cutter, cut 12 rounds from pie crusts. Press rounds into prepared pan. Spoon onion mixture into crusts. Top with egg mixture, then goat cheese.
Bake 25 mins or until quiches are set and pastry is lightly browned. Serve warm.
