Greek Salad With Avocado - cooking recipe

Ingredients
    5 cups romaine lettuce, washed and roughly chopped
    1 None onion, peeled and sliced into thin rings
    1 lb tomatoes, roughly chopped
    1/2 cup black olives
    1/2 None avocado, peeled, stoned and sliced
    2 tbsp shredded fresh basil leaves, plus extra leaves, to garnish
    1 2/3 cups reduced fat feta cheese, cubed
    4 tbsp white wine vinegar
    8 tbsp vegetable stock
    1/4 tsp sugar
Preparation
    Toss the lettuce, onion, tomatoes, olives, avocado, basil and feta cheese in a large bowl. In another bowl, mix together the vinegar and stock with the sugar and season to taste with salt and freshly ground black pepper. Pour over the salad and toss gently to mix.
    Divide the salad between four serving bowls and sprinkle with more freshly ground black pepper and garnish with basil leaves.
