Ingredients

2 tbsp butter
3 tbsp brown sugar
1 1/2 tbsp honey
1 1/4 cups old-fashioned rolled oats
1/2 cup chopped almonds
1 1/2 cups blueberries, plus extra for garnish
1 cup plain low-fat yogurt
1 tsp vanilla extract
3 None apricots or peaches, pitted and chopped
1 tsp lemon juice
Preparation

Preheat the oven to 350\u00b0F. Line a baking sheet with baking parchment. Melt the butter in a medium saucepan over medium heat. Stir in the brown sugar and 1 tbsp honey until blended. Stir in the oats and almonds and cook, stirring, for 2-3 mins.
Spread the almond mixture on the baking sheet and bake for 7-10 mins until golden. Remove from the oven and cool.
Place the blueberries, yogurt, vanilla and remaining honey in a blender and puree until smooth. Mix the apricots and lemon juice together. To serve, alternately layer the almond crunch, apricots and blueberry yogurt in four glasses. Serve garnished with extra blueberries.
