Grilled Calamari, Mango Salad And Crispy Shallots - cooking recipe

Ingredients
    2 None small green chilies, deseeded
    2 tbsp fish sauce
    1 tbsp lime juice
    1 tbsp palm sugar, grated
    2 None mangoes, diced
    2 None spring onions, sliced
    1 1/4 cups fresh cilantro leaves
    1/4 cup fresh mint leaves
    1/2 cup cashews, toasted
    1 tbsp oil
    1 lb calamari, cleaned, halved lengthwise and insides scored in a diamond pattern
    4 None shallots, sliced and deep-fried
Preparation
    Combine green chilies, fish sauce, lime juice and palm sugar in a food processor. Process until smooth. Toss with mango, spring onion, cilantro, mint and cashews.
    Preheat grill or broiler. Coat calamari in oil then cook for 2-3 mins. Serve with mango salad, sprinkled with crispy shallots.
