Asparagus, Mango And Goat Cheese Salad - cooking recipe

Ingredients
    2 1/4 lb asparagus, woody ends snapped off, cut into chunks
    1 None ripe mango, peeled, pitted and sliced
    2 None red onions, peeled and thinly sliced
    2 None limes, 1 zested, 2 juiced + extra lime slices, for garnish
    2 tbsp white wine vinegar
    1 None red chili, deseeded and chopped
    1 pinch brown sugar
    8 tbsp canola oil
    1/2 lb goat cheese, crumbled
Preparation
    Cook asparagus in boiling salted water for 3-4 mins. Drain and rinse under cold water. Mix with mango and onions.
    Whisk lime juice and zest, vinegar, chili and brown sugar. Season then gradually whisk in oil. Toss with vegetables and serve sprinkled with goat cheese and garnished with lime slices.
