Chinese Honey Chicken - cooking recipe

Ingredients
    1/3 cup lemon juice
    2 tbsp reduced sodium soy sauce
    2 tbsp coarse grain mustard
    1 tbsp honey
    1 tsp grated fresh ginger
    1 lb boneless skinless chicken breast, cut into 1 1/2-inch chunks
    1 tbsp olive oil
    None None Mixed salad, lime wedges, to serve
Preparation
    Preheat the oven to 350\u00b0F. Line a baking pan with foil.
    Combine lemon juice, soy sauce, mustard, honey and ginger in a large bowl. Add chicken pieces, turning to coat well. Refrigerate for at least 30 mins.
    Heat oil in a large skillet on medium heat. Cook chicken for 1-2 mins each side, until golden. Transfer to prepared baking pan. Bake for 5-10 mins, until cooked through. Serve with salad and lime wedges on the side.
