Pork Steak With Pasta In Tomato And Olive Sauce - cooking recipe

Ingredients
    4 None pork steaks (7 oz each)
    3 tbsp butter
    1 None onion, peeled and diced
    1 clove garlic, peeled and diced
    1 tbsp all-purpose flour
    2 cups tomato sauce
    1-2 tsp sugar
    3 tbsp small black olives
    1 None tomato, quartered, seeded, and diced
    1 bunch mixed thyme and oregano
    9 oz pasta shells
Preparation
    Tie each pork steak with string into a medallion (round shape). Tuck a few thyme sprigs under the string.\r\nHeat 2 tablespoons of the butter in a frying pan, sear the meat on both sides then turn the heat down and cook for 3-4 mins each side. Transfer the steaks to a tray, season thoroughly, and put in the oven to keep warm.
    Add the rest of the butter to the pan juices with the onion and garlic and cook until softened. Add the flour and continue to cook for 2 mins.\r\nPour in the tomato sauce and bring to a boil, stirring. Season with salt and pepper, adding sugar to taste. Add the olives, tomato and a handful of chopped thyme and oregano leaves.\r\nMeanwhile, cook the pasta in a pan of boiling salted water according to package instructions until just tender.
    Drain the pasta and serve on plates with the pork steaks. Spoon the sauce over and garnish with oregano sprigs and freshly ground black pepper.
