Winter Squash, Cheese And Spinach Strudel - cooking recipe

Ingredients
    1 1/4 lb winter squash, peeled, cut into 1 inch pieces
    2.5 oz baby spinach
    1 oz cheddar cheese, grated
    2.5 oz feta cheese, crumbled
    8 sheets filo dough
    3 1/2 tbsp butter, melted
    2 tsp poppy seeds
    None None steamed green beans, to serve
Preparation
    Preheat oven to 350\u00b0F. Grease an 8 inch springform pan. Steam winter squash over simmering water for 10-12 mins, or until tender. Drain. Return to pan and cook over medium heat until dry then mash. Add spinach and cook over medium heat for 2-3 mins, or until spinach wilts. Add cheddar cheese. Let cool then add feta.
    Lightly brush 4 sheets of filo dough with butter. Add another sheet of filo dough to each buttered sheet. Distribute filling in a thin line lengthwise along edge of each stack then roll up to enclose filling. Starting at the center of prepared pan, carefully coil rolls, seam-side down, joining each roll to the end of the last and coiling it around the previous roll until the pan is filled.
    Brush top with remaining butter and sprinkle with poppy seeds. Place pan on a baking tray and bake for 25-30 mins, or until golden. Serve with beans.
