Triple Chocolate Cheesecake - cooking recipe

Ingredients
    10 oz plain chocolate cookies, broken into pieces
    5 tbsp unsalted butter, melted
    25 oz cream cheese, at room temperature
    3 None large eggs
    3/4 cup sugar
    1 tsp vanilla extract
    4 oz dark chocolate, melted
    4 oz white chocolate, melted
    2 tbsp raspberry liqueur
    None None Chocolate Topping
    4 oz dark chocolate, chopped
    2 tbsp unsalted butter
    1 tbsp vegetable oil
Preparation
    Preheat oven to 425\u00b0F. Place cookies in a food processor and process into crumbs. Add butter and process until combined. Press evenly into the base of an 8 inch springform pan. Chill 15 mins.
    For the filling, beat the cheese, eggs, sugar and vanilla with an electric mixer until smooth. Divide mixture in half. Beat dark chocolate into one portion and white chocolate and liqueur into the other. Pour dark chocolate mixture into cake pan over cookie base. Add white chocolate mixture and smooth the surface with a spatula. Bake 10 mins, then reduce oven temperature to 275\u00b0F and bake 40-50 more mins, until firm. Cool in pan.
    Meanwhile, for the chocolate topping, add chocolate, butter and oil to a heatproof bowl. Set over a pan of gently simmering water and stir until smooth. Spread on cheesecake. Chill 1 hour, until set. Slice and serve.
