Rhubarb Bread Pudding - cooking recipe
Ingredients

10 1/2 oz (about 6 stalks) rhubarb, trimmed, cut into 3-inch lengths
1/2 cup packed brown sugar
10 slices white bread, crusts removed, buttered, each cut into 4 triangles
3 None large eggs
1/2 cup granulated sugar
1 cup milk
1 cup heavy cream
1 tsp vanilla extract
None None Confectioners' sugar, to dust
Preparation

Place rhubarb in a small skillet with brown sugar and 2 tbsp water and cook on low heat for 3-5 mins, until just tender. Remove pan from heat.
Preheat oven to 350\u00b0F. Grease a 6-cup ovenproof dish.
Place bread in prepared dish, overlapping. Place rhubarb between each layer of bread. Whisk together eggs, granulated sugar, milk, cream and vanilla. Pour over bread and set aside to soak for 15 mins.
Bake for 45 mins, until set and golden. Dust with confectioners' sugar to serve.
