3/4 cup soymilk
2 None large ripe bananas, 1 mashed, 1 sliced
1 tbsp maple syrup
1/2 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking powder
None None Cooking oil spray
None None Strawberry jam, to serve
Preparation

Whisk soymilk, mashed banana, maple syrup and vanilla extract in a medium bowl. Sift flour and baking powder and mix with a fork until combined.
Lightly spray a large non-stick frying pan with oil, then place over moderate heat. Cook heaped tablespoons of batter, in batches, for 2-3 minutes each side or until golden and cooked. Serve with sliced banana and jam.
