Spaghetti With Tuna And Spinach - cooking recipe

Ingredients
    16 oz spaghetti
    2 tbsp vegetable or olive oil
    1 None medium red onion, finely chopped
    2 cloves garlic, minced
    3.5 oz roasted red peppers, thinly sliced
    1 (15 oz) can tuna in brine, drained, flaked
    2 oz pitted kalamata olives, thinly sliced
    1 tsp lemon zest
    5.25 oz baby spinach
    None None grated Parmesan cheese, to serve
Preparation
    Cook pasta in boiling salted water for 8-10 mins, or until al dente. Drain.
    Meanwhile, heat 1 tbsp oil in a large frying pan over medium-high heat. Cook onion for 5 mins, or until soft. Add garlic. Cook for 1 min, or until fragrant. Add peppers, tuna, olives and lemon zest. Cook for 2 mins.
    Add pasta and remaining oil. Remove from heat. Mix in spinach until wilted. Serve topped with Parmesan.
