Mediterranean Style Sandwiches - cooking recipe

Ingredients
    6 None marinated artichoke hearts, drained and sliced
    1 cup grated Cheddar cheese
    1/2 cup stuffed green olives, drained and sliced
    1/2 cup roasted red pepper, drained and sliced
    2 tbsp fresh chopped parsley
    1 tbsp olive oil
    8 None thick slices multigrain bread
    None None Arugula leaves
Preparation
    Combine the artichoke, cheese, green olives, pepper, parsley and oil in a medium bowl. Spoon the mixture onto 4 slices of the bread. Top with arugula leaves.
    Top with the remaining bread slices and press sandwiches together firmly. Using a serrated knife, cut sandwiches into halves or quarters.
