Classic Russian Dressing - cooking recipe

Ingredients
    1 None large beet, trimmed
    2 tbsp coarsely chopped pickled onions
    1 tbsp capers, drained, rinsed
    1/2 cup sour cream
Preparation
    Boil, steam or microwave beet until tender. Drain, reserving 1/4 cup cooking liquid. When cool enough to handle, peel then chop coarsely.
    Blend or process beet with remaining ingredients and reserved liquid until smooth.
