Salt And Pepper Shrimp - cooking recipe

Ingredients
    1 None lemon, zested and juiced
    1 tbsp white pepper
    2 tbsp flour
    1 tsp Szechuan peppercorns
    None None canola oil, to deep-fry
    2 1/4 lb raw shrimp, peeled, butterflied, deveined, tails intact
    1 None large egg, lightly beaten
    None None fresh cilantro sprigs, to serve
Preparation
    To make the dipping sauce, combine lemon zest, lemon juice, 1/2 tsp salt and 1/2 tbsp white pepper. Set aside.
    Season flour with 1 tsp salt, remaining white pepper and Szechuan peppercorns. Heat canola oil in a wok to 350\u00b0F. Dip shrimp in egg then flour mixture. Deep-fry for 2-3 mins, until golden brown. Drain on paper towels.
    Serve immediately with cilantro and dipping sauce.
