Caramelized Onion And Polenta Cake - cooking recipe

Ingredients
    2 tbsp olive oil, plus additional, to grease
    4 large onions, thinly sliced
    2 tbsp brown sugar
    2 tbsp balsamic vinegar
    3/4 cup grated mozzarella or Cheddar cheese
    3/4 cup grated fontina or Swiss cheese
    2 cups instant polenta
    2 tbsp butter
    1 1/4 cups grated Parmesan cheese
    None None Mixed salad greens, to serve
Preparation
    Grease a 9-inch square baking dish with oil.
    Heat oil in a large skillet on low heat. Cook onion for 15 mins, until soft. Add sugar and vinegar. Cook, stirring, for 5 mins, until caramelized. Remove from heat. Stir in cheese.
    Bring 6 cups salted water to a boil in a medium saucepan on high heat. Reduce heat to medium. Gradually add polenta in a thin, steady stream, whisking constantly, until smooth. Reduce heat to low. Cook, stirring, for 5-10 mins, until polenta comes away cleanly from side of pan. Stir in 1/2 each of the butter and Parmesan cheese.
    Preheat the broiler on high. Pour 1/2 of polenta into prepared dish. Spread with onion mixture then remaining polenta. Sprinkle with remaining Parmesan cheese and dot with remaining butter. Broil for 5 mins, until golden. Cut into squares. Serve with salad.
