Chocolate Pecan Cookies - cooking recipe

Ingredients
    1 1/2 cups pecan pieces
    8 tbsp (1 stick) butter, softened
    1/2 cup sugar
    1/2 tsp vanilla extract
    1 None egg
    2/3 cup brown rice flour
    1/2 cup cornstarch
    5 oz semi-sweet chocolate, chopped coarsely, plus 1 oz, melted
    24 None whole pecans
Preparation
    Preheat the oven to 350\u00b0F. Grease 2 baking pans and line with parchment paper. Process pecan pieces until they are ground finely.
    Beat butter, sugar, vanilla and ground pecans in large bowl with electric mixer until light and fluffy. Add egg; beat until combined. Sift flour and cornstarch; stir in cookie dough. Stir in chopped chocolate.
    Roll rounded tablespoons of mixture into balls. Place 2 inches apart on prepared pans; flatten slightly. Top with whole pecans.
    Bake for about 20 mins. Cool in pan 2 mins. Remove from pan; completely on wire rack. Drizzle with melted chocolate.
