Tomato And Basil Crackers - cooking recipe

1 1/3 cups all-purpose flour
2 1/2 tbsp butter, finely chopped
2 tbsp chopped fresh basil leaves
2 tbsp tomato puree
1/4 tsp ground black pepper
1 None large egg white, lightly beaten
2 tsp sea salt
Preparation

Sift flour into a large bowl. Cut in butter until mixture resembles coarse breadcrumbs. Stir in basil, tomato puree and pepper. Add 1-2 tbsp ice water and mix until mixture just comes together. Turn out onto a lightly floured work surface and knead until smooth. Cover and refrigerate for 30 mins.
Preheat oven to 350\u00b0F. Grease 2 baking trays.
Roll dough out on a floured work surface until 1/8 inch thick. Prick all over with a fork and cut into 1 1/2 inch squares. Place about 1/3 inch apart on trays. Brush with egg white and sprinkle with salt. Bake for 15 mins, or until light golden brown. Let cool on trays.
