Chutney And Mustard Meatloaf - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None onion, finely chopped
    1 lb ground pork
    1/3 cup dried breadcrumbs
    2 None eggs, lightly beaten
    2 slices bacon, finely chopped
    2 tbsp finely chopped fresh parsley
    2 tbsp tomato chutney, plus additional to serve
    1 tbsp coarse grain mustard
    None None Salad, to serve
Preparation
    Preheat the oven to 350\u00b0F. Grease a foil-lined 8 x 4 inch loaf pan
    Heat oil in a skillet on medium heat. Add the onion and saute for 4-5 mins, until tender. Cool slightly.
    Place ground pork, breadcrumbs, eggs, bacon, parsley, chutney, mustard and onion in a large bowl and season to taste. Mix until well combined. Spoon into prepared pan.
    Bake for 1 hour or until golden brown and cooked through. Let stand for 5 mins. Drain off any drippings, then remove meatloaf from pan. Serve sliced with salad and chutney.
