Beef Casserole With Macaroni And Cheese - cooking recipe

2 tbsp olive oil
14 oz ground beef
3 None onions, finely chopped
2 cloves garlic, finely chopped
5 tbsp tomato paste
1/2 cup dry red wine
1/4 tsp dried basil
14 oz elbow macaroni
2 tbsp butter
2 tbsp flour
1 cup vegetable stock
1 cup milk
1 cup grated Cheddar cheese
1/2 cup grated Parmesan cheese

Preheat the oven to 400\u00b0F. Heat the oil in a large skillet on medium-high heat. Add ground beef; cook, stirring with a wooden spoon to break up lumps, for 5 mins or until browned. Stir in the onions and garlic; saute 5 mins. Stir in the tomato paste and saute 30 seconds. Pour in the red wine and 1 1/4 cups water. Bring to a boil. Reduce heat to low; simmer for about 10 mins, while stirring. Add the basil and season to taste.
Meanwhile, cook the macaroni in boiling salted water according to the package directions. Melt the butter in a medium saucepan on medium heat. Add the flour and cook, stirring, 30 seconds. Pour in the stock and the milk while stirring. Bring to a boil. Reduce heat to low; simmer for 3-5 mins and season to taste. Stir 1/2 of each cheese into the sauce.
Drain the macaroni and stir it into the sauce. Spoon the beef mixture into a greased baking dish. Cover with the macaroni cheese. Sprinkle with the remaining cheeses.
Bake for 30-40 mins or until golden.
