Lamb Chops With Currant Couscous And Lemon Yogurt - cooking recipe

Ingredients
    1 tbsp olive oil
    2 tsp ground cumin
    8 None lamb chops
    None None Mixed salad, to serve
    None None FOR THE CURRANT COUSCOUS
    1/2 cup couscous
    1/3 cup currants
    1/3 cup slivered almonds, toasted
    1 tbsp chopped parsley
    1 tsp sumac
    None None FOR THE LEMON YOGURT
    1/3 cup low fat yogurt
    1/2 None lemon, juiced
    1 tsp cumin
Preparation
    Combine oil and cumin in a shallow dish. Season to taste. Add lamb chops, turning to coat in marinade. Let stand for 10 mins to marinate.
    For the currant couscous, combine couscous and 1/2 cup boiling water in a medium heatproof bowl. Cover and let stand for 5 mins. Fluff with a fork. Stir in currants, almonds, parsley and sumac.
    For the lemon yogurt, combine yogurt, lemon juice and cumin in a small bowl. Cover and refrigerate until ready to serve.
    Heat an oiled grill pan on high heat or preheat the grill to medium-high. Cook lamb chops for 2-3 mins each side until cooked to desired doneness.
    Serve lamb chops with couscous and lemon yogurt. Accompany with salad.
