Potatoes With Garlic, Chili And Feta - cooking recipe

2 1/4 lbs potatoes
4 tbsp olive oil
6 None spring onions, trimmed and thinly sliced
2 None red chili peppers, deseeded and sliced
3-4 cloves garlic, thinly sliced
5 oz Feta cheese, crumbled
Preparation

Cook the potatoes in boiling, salted water for 15-20 mins until tender. Drain and rinse under cold water until cool enough to handle. Peel the potatoes.
Heat the oil in a large frying pan, add the potatoes and fry for 8-10 mins, turning.
Add the spring onions, chili and garlic to the pan and saute for 4-5 mins with the potatoes, stirring. Season with salt then transfer to a serving bowl. Sprinkle with Feta then serve.
