Potato, Bacon And Apple Skewers With Lemon Dip - cooking recipe

700 g new potatoes
200 g creme fraiche
None None Zest of 1 lemon
Pinch None sugar
3 tbsp runny honey
1/2 tsp chilli flakes
1 None red apple, cored and cut into wedges
8 None rashers streaky bacon
15 g sage leaves
2 None red onions, peeled and cut into wedges
None None oil, for greasing
Preparation

Cook the potatoes in salted boiling water for 15-20 mins until just tender. Drain. Set aside to cool.
For the lemon dip, mix the creme fraiche, lemon peel and sugar. Season to taste with salt and freshly ground black pepper.
For the marinade, mix the honey with 1 tbsp water and the red pepper flakes. Set aside.
Thread the potatoes onto 8 metal (or pre-soaked wooden) skewers with the apple, bacon, sage and onion. Brush with some of the marinade.
Heat a greased nonstick grill pan. Grill the skewers for 8-10 mins, turning occasionally and brushing several times with the marinade. Serve with the lemon dip.
