Ingredients

500 g flour
14 g dried yeast
4 tbsp olive oil
1/2 bunch basil, leaves removed and cut into strips
4 tbsp tomato paste
1/2 tsp chilli paste
500 g tomatoes, sliced
300 g cooked ham
200 g green olives
300 g grated waxy cheese, such as Gouda
Preparation

Sift flour into a bowl with 1 tsp salt. Add yeast. Add 1 cup lukewarm water and 2 tbsp olive oil then knead until smooth. Cover and let proof in a warm place for about 45 mins. Meanwhile, mix tomato and chili paste with remaining olive oil and 1/2 the basil and season.
Preheat oven to 400\u00b0F. Roll out dough on a floured work surface into a 13x15 inch rectangle. Spread tomato mixture over dough then top with ham, tomato, olives then cheese. Roll up dough from long side and transfer to a baking sheet lined with parchment paper. Bake for 30 mins then remove and allow to rest for 3-4 mins. Sprinkle with remaining basil and cut into slices.
