Meatballs With Guacamole - cooking recipe

Ingredients
    2 tbsp peanut oil
    1 None medium Spanish onion, chopped finely
    1 clove garlic, minced
    1 tsp ground cumin
    1 tsp ground coriander
    1/2 tsp chili powder
    1 1/2 lb ground beef
    1 (28 oz) can crushed tomatoes
    1 (15 oz) can mixed beans
    None None Guacamole
    2 None large avocados (1 lb in total), flesh chopped
    1 None medium tomato, seeded, chopped finely
    1 None small red onion, chopped finely
    2 tsp lemon juice
    1/3 cup sour cream, to serve
Preparation
    Heat 1 tbsp peanut oil in a large, nonstick frying pan over medium heat. Add onion, garlic and spices. Cook, stirring, until onion softens. Transfer to a large bowl and mix in ground beef. Roll into meatballs, each using around 1 tbsp beef mixture.
    Add remaining oil to pan. Working in batches, cook meatballs until browned all over. Remove from pan.
    Add tomatoes and beans to pan. Bring to a boil then reduce heat and simmer for 5 mins, or until mixture has reduced by 1/4. Return meatballs to pan and simmer until meatballs are cooked through.
    For the guacamole, mash avocado flesh with a fork in a medium bowl until almost smooth. Add tomato, onion and lemon juice. Season to taste.
    Serve meatballs topped with guacamole and sour cream.
