Cured Salmon Salad - cooking recipe

Ingredients
    1/3 cup packed brown sugar
    1/4 cup sea salt
    2 tbsp sweet sherry
    1/2 tsp five-spice powder
    1 tbsp lime juice
    13 oz salmon fillet, skin and bones removed
    4 oz mixed Asian greens or other salad greens
    2 small cucumbers, seeded and thinly sliced
    None None FOR THE DRESSING
    1 tbsp light soy sauce
    2 tsp sweet sherry
    2 tsp lime juice
    1 clove garlic, crushed
    1 None red bird's-eye chili pepper, finely chopped
    1/2 tsp granulated sugar
Preparation
    Combine brown sugar, salt, sherry, spice and lime juice in a shallow dish. Add fish; turn to coat in mixture. Cover with plastic wrap; refrigerate overnight.
    For the dressing, whisk all ingredients and 2 tsp water in a small bowl.
    Pat fish dry and slice thinly. Toss greens, cucumber and dressing in a medium bowl. Divide among serving plates; top with fish.
