Ingredients

4 None chicken leg pieces
3 tbsp butter, melted
1 tbsp dijon mustard
3 tbsp olive oil
1 tbsp honey
2 cloves garlic, crushed
2 None parsnips, thinly sliced
1 tbsp maple syrup
None None spinach salad, to serve
Preparation

Preheat oven to 400\u00b0F. Line a baking dish with foil or baking paper.
Arrange chicken pieces in a single layer in prepared dish.
In a bowl, combine butter, mustard, 1 tablespoon olive oil, honey and garlic. Brush liberally over chicken.
Bake chicken 25-30 minutes, turning once, until cooked through.
Meanwhile, in a bowl, toss together parsnips, remaining olive oil and maple syrup. Cook in a frying pan over low heat 10-15 minutes, until parsnips are golden and tender.
Serve chicken with parsnips and spinach salad.
