Meatballs With Crispy Onion Rings And Mashed Sweet Potatoes - cooking recipe

Ingredients
    2 lbs sweet potatoes, peeled and roughly chopped
    3 None onions, 1 diced finely, 2 sliced
    1 lb ground pork or a mixture of ground meats
    4 tbsp breadcrumbs
    1 tbsp chopped parsley
    4 tbsp milk
    1 medium egg, beaten
    2 tsp mustard
    8 strips bacon
    1/2 cup vegetable oil
    2 tbsp all-purpose flour
    3 tbsp olive oil
    1/2 tsp grated nutmeg
    1 tsp chopped chives, to garnish
Preparation
    Cook the potatoes in boiling salted water for about 20 mins until tender. Meanwhile, mix the diced onion in a bowl with the meat, breadcrumbs, parsley, milk, egg, mustard and plenty of salt and pepper. Form into 8 balls. Wrap a bacon strip round each ball. Heat 2 tbsp of oil in a pan and fry the meatballs for 8 mins, turning them until evenly browned.
    To make the onion rings, roll the sliced onions in flour to coat. Heat the rest of the vegetable oil in a saucepan, add the onion slices in batches and fry them a few mins until golden brown. Remove from oil with a slotted spoon and drain on paper towels. Season with salt.
    Drain the potatoes and return them to the pan. Dry them over medium heat and add the olive oil, then mash and season with salt, pepper and nutmeg. Arrange 2 meatballs and some sweet potatoes on 4 warmed plates. Top with onion rings and sprinkle with chives.
