Caramel And Coffee Puddings - cooking recipe

Ingredients
    1/2 cup sweetened condensed milk
    1/3 cup brown sugar
    4 1/2 tbsp butter, melted
    2 tbsp golden syrup or maple syrup
    1 tsp vanilla extract

    1/2 cup granulated sugar
    1 None medium egg
    4 tbsp butter, melted
    1 tbsp instant coffee granules
    1/4 cup milk, warmed
    1/4 cup self-rising flour, sifted
    1 cup chopped dates
    None None whipped cream, to serve
Preparation
    Preheat oven to 350\u00b0F. Grease 6 (8 oz) ramekins and line bases with baking paper.
    To make the sauce, whisk together condensed milk, brown sugar, butter, syrup and vanilla extract. Distribute 1/2 the sauce evenly between ramekins.
    In a stand mixer, whip sugar and egg until thick. Beat in butter. Dissolve coffee in milk. Fold flour into egg mixture, alternately with milk mixture. Fold in dates. Distribute mixture evenly between ramekins until 2/3 full. Smooth tops.
    Line a deep baking dish with a tea towel. Transfer ramekins to dish and add enough hot water to come halfway up the sides of ramekins. Cover pan with baking paper and foil. Bake for 50-55 mins, until a skewer inserted in the center comes out clean.
    Heat remaining sauce in a saucepan for 1-2 mins, stirring, until thickened slightly. Serve puddings hot with warm sauce and whipped cream.
