Baked Cauliflower Cheese Gratin - cooking recipe

Ingredients
    1 3/4 lbs cauliflower, cut into florets
    3 tbsp unsalted butter, chopped
    1/4 cup flour
    2 cups milk
    1 1/4 cups sour cream
    3/4 cup grated sharp Cheddar cheese
    1 cup fresh breadcrumbs
    None None Pinch of smoked paprika, to serve
Preparation
    Preheat the oven to 400\u00b0F
    Cook the cauliflower in a saucepan of boiling water for 5 mins, until just tender. Drain, then transfer to a shallow 1 1/2-quart baking dish.
    Meanwhile, melt the butter in a medium saucepan on medium heat. Stir in the flour and cook for 1 min, until bubbling. Gradually pour in the milk, stirring until smooth. Bring to a boil and simmer for 3 mins, until thickened. Remove from heat. Stir in the sour cream and 1/2 of the cheese. Season.
    Pour the cream sauce over the cauliflower. Sprinkle the top with breadcrumbs and the remaining cheese.
    Bake for 15-20 mins, until golden and bubbly. Sprinkle with paprika and serve.
