Orange Mustard Chicken With Maple Vegetables - cooking recipe

Ingredients
    8 None chicken drumsticks
    1/4 cup orange marmalade
    1/4 cup orange juice
    2 tbsp butter, melted
    1 tbsp Dijon mustard
    1 tbsp maple syrup
    1 tbsp olive oil
    2 cloves garlic, crushed
    None None Maple Vegetables
    6 None carrots, cut into wedges
    2 None parsnips, peeled, cut into wedges
    2 tbsp maple syrup
    1 tbsp olive oil
    None None Salad greens, to serve
Preparation
    Preheat oven to 400\u00b0F. Line a baking dish with foil or parchment paper.
    Arrange chicken in a single layer in dish. In a small bowl, combine marmalade, juice, butter, mustard, syrup, oil and garlic. Brush liberally over chicken.
    Bake 35-40 minutes, turning once, until cooked through (juice will run clear when tested with a skewer).
    Meanwhile to make maple vegetables, line a baking sheet with parchment paper. Mix carrots, parsnips, syrup and oil together. Spread in a single layer on baking sheet and season to taste. Bake 25-30 minutes, until lightly golden and tender.
    Serve chicken with vegetables and drizzled pan juices. Accompany with salad greens.
