Fresh Cherry And Pistachio Tabbouleh - cooking recipe
Ingredients

8 oz bulgur wheat
1 lb fresh cherries, pitted, halved
1/2 cup pistachios, chopped coarsely
2/3 cup fresh mint leaves, chopped finely, plus extra to garnish
1/3 cup fresh flat-leaf parsley leaves, chopped finely, plus extra to garnish
1 None small red onion, chopped finely
1/2 cup olive oil
1/3 cup red wine vinegar
Preparation

Combine bulgur wheat and 2 cups boiling water in a large heatproof bowl. Let stand for 15 mins, or until tender and water is absorbed.
Add cherries, pistachios, chopped herbs and onion.
Whisk together olive oil and vinegar. Season to taste. Stir dressing into salad and season to taste.
Serve salad sprinkled with extra herbs.
