Cream Of Pumpkin Soup - cooking recipe

1 None large onion, roughly chopped
7 oz bacon, roughly chopped
3 1/3 lb winter squash, peeled, roughly chopped
1 1/4 lb potatoes, peeled, roughly chopped
5 cups chicken stock
1/2 cup heavy cream
Preparation

Melt butter in a large saucepan over medium heat. Cook onion and bacon, stirring, until onion has softened. Add squash, potatoes and chicken stock. Bring to a boil then reduce heat and simmer for 20 mins, or until squash is soft. Let cool for 10 mins then puree.
Add cream and stir to combine. Gently heat until warmed through.
