Ingredients

1 tsp vegetable or peanut oil
4 None spring onions, thinly sliced
1 clove garlic, minced
1 None small red pepper, finely chopped
2 oz frozen pea and corn mix, thawed
7 oz small fried tofu puffs, halved
8 None large eggs, at room temperature
1 tbsp sweet chili sauce
1 oz fresh pea shoots
2 tsp sesame oil
Preparation

Preheat oven to 350\u00b0F. Grease and line an 8 inch nonstick cake pan with baking paper.
Heat oil in a medium frying pan over medium heat. Saute onions and garlic for 1 min, or until soft. Add pepper and vegetable mix. Cook for 2 mins, or until vegetables are tender. Remove from heat and transfer to prepared pan.
Add tofu puffs to pan. Whisk eggs and sweet chili sauce together then pour over tofu mixture. Bake for 30-35 mins, or until golden brown. Let cool in pan for 5 mins then transfer to a large serving plate. Top with pea shoots and drizzle with sesame oil.
