Gazpacho With Mozzarella - cooking recipe

Ingredients
    1 kg tomatoes, sliced in half crosswise
    1 None cucumber, peeled, cored and diced
    2 None red peppers, peeled, deseeded and diced
    1 clove garlic, peeled and finely chopped
    4 tbsp olive oil
    1-2 tbsp balsamic vinegar
    1-2 tbsp wine vinegar
    None None Tabasco
    None None salt and pepper
    2 None spring onions, trimmed and sliced
    125 g mozzarella, drained and finely diced
Preparation
    Puree garlic, tomatoes, cucumber and 1 pepper. Add oil and vinegar, season and add hot sauce to taste. Chill for 2 hours.
    To serve, puree soup again then pour into 6 glasses. Sprinkle with spring onions, diced red pepper and cheese and serve.
