Pasta Salad With Shrimp, Avocado And Melon - cooking recipe

Ingredients
    250 g short pasta, such as conchilgie
    5 tbsp olive oil
    300 g frozen prawns, defrosted
    1 small honeydew melon, balled
    1 None avocado, peeled and sliced
    1 None red onion, thinly sliced
    1/2 bunch basil, chopped
    1 bunch rocket
    1 clove garlic, crushed
    1/2 None lemon, juiced
Preparation
    Cook the pasta in boiling salted water as per the package instructions. Add shrimp for the last minute of cooking, drain, transfer to a bowl and drizzle with 1 tbsp olive oil. Add melon balls, avocado slices, onion, basil and arugula to the bowl and mix well.
    For the dressing, mix the garlic, 4 tbsp olive oil and lemon juice together in a bowl. Season with salt and pepper and pour over the salad. Mix well and refrigerate until ready to serve.
