Chicken With Cranberry And Chive Sauce - cooking recipe

1 tbsp olive oil
4 small boneless skinless chicken breasts
1/3 cup dry red wine
3 cups fresh or frozen cranberries
3/4 cup orange juice
1-2 tbsp honey
2 tbsp finely chopped fresh chives
Preparation

Heat oil in large skillet on medium-high heat. Cook chicken, uncovered, until browned both sides and cooked through. Remove from pan; cover to keep warm.
Deglaze pan with wine, stirring until mixture reduces by half. Add cranberries, orange juice and 3/4 cup water; bring to a boil. Reduce heat to low; simmer, uncovered, stirring occasionally, for 10 mins or until sauce reduces by half.
Remove from heat. Stir honey and chives into sauce. Serve over chicken.
