Ingredients
    1 cup all-purpose flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp ground nutmeg
    1/2 cup chilled butter, chopped
    1 cup buttermilk
    2 1/2 cups maple syrup
None None vanilla ice cream, to serve
Preparation
In a large bowl, sift flour, baking powder, soda and nutmeg together. Cut in butter until mixture resembles breadcrumbs. Make a well in the center and, using a fork, lightly mix in buttermilk, to form a wet dough.
To make syrup, bring 3 cups water and syrup to a boil over medium heat, stirring until combined. Reduce heat to low.
Use 2 spoons to form rounded balls of dough and gently lower into simmering syrup. Cook, covered, for 15-20 mins. Serve dumplings in syrup, topped with ice cream.
